Rice Grits by Chef Waylon Rivers of Black Sheep

1 cup of rice grits  /  2 1/2 cups of water  /  1 cup of whole milk  /  2 tbsp of butter  /  1 tbsp of salt

method of cooking

Bring the water and whole milk to a boil in a medium sauce pan. Add the rice grits to the pot, stir immediately, and lower to a simmer. Cook at a simmer for about 20-25 minutes. Stir very often to keep the rice from sticking to the bottom of the pan. If the rice absorbs all of the liquid before it is done then add in 1/2 cup quantities of liquid until the grits are soft and creamy. When the grits are finished, fold in butter and salt. Serve with Mayport shrimp and hot sauce.
