Brown Rice by Chef Tom Gray of Moxie

 

List of ingredients

1 cup of brown rice  /  1 cup of water  /  1 cup of chicken stock  /  1/2 onion   /  1 tbsp of oil  /  1 tbsp of soy sauce


cooking method

heat oil in a medium pot over high heat. when oil is very hot, add the onion half and sear for several mintues, until charred. add brown rice and toast for about 2 minutes, stirring constantly to ensure it does not stick. add water, stock, soy sauce, and red pepper flakes, if desired, and bring to a boil. reduce heat, and simmer covered for about 20 minutes until the liquid has been absorbed. remove from heat, discard charred onion, and let stand for 2 minutes covered before serving.
